This September, Hakkasan’s group executive chef Tong Chee Hwee and David Muñoz, chef-owner of Street XO in Mayfair, will collaborate to celebrate the Chinese festival of Golden Week at Hakkasan.
A limited edition menu will feature new dishes, said to “bring together their collective and diverse influences to create a one-off dining experience at Hakkasan.” The collaboration will see chef Tong’s refined brand of Chinese cooking meet the so-called “enfant terrible of Spanish gastronomy.” All dishes will also be available a la carte. Muñoz, whose original restaurants are in Madrid — Street XO and Diver XO — opened in London a year ago; reviews have been mixed. His style might be termed hyper-modern Spanish fine dining or post-nueva cocina. Conventional he is not.
The Spanish chef, whose first kitchen job in London was at Hakkasan, said: “When I first came to London [at 21 years old], I had only cooked in Mediterranean restaurants. I had one meal at Hakkasan and it was a revelation. I knew I had to work there. I watched and I learned and I practiced the techniques and recipes I saw in the kitchen and this is how I began to develop my own style that you see at StreetXO. It is an honour to work alongside Chef Tong to bring my own ideas back to Hakkasan for this special Golden Week menu.”
Chef Tong said: “I’m delighted to be working with Chef David Muñoz again. We worked together many years ago in the Hakkasan kitchen at the beginning of his illustrious career, so it’s wonderful to be back here creating a new menu together.”
