Los Angeles’ Eggslut Is Coming to London

It will open the first of a number of sites in London next year

Wildly popular U.S. restaurant chain, Eggslut, has announced that it will launch in the U.K. next year. “An initial London site will be announced early in the year with more set to follow,” according to an announcement shared with Eater this morning.

The brand, according to the announcement:

Eggslut is a chef driven, gourmet food concept founded in 2011. The brand prides itself on the quality and taste of its food, with everything made fresh to order. It has pioneered a new category in the fast-casual dining sector, with a menu inspired by a passion for eggs. No longer just a breakfast staple, Eggslut makes eggs appetising, all day, every day serving comforting classics with a twist.

Eggslut’s most famous / most Instagrammed dishes include:

Slut: coddled egg on top of a smooth potato purée, poached in a glass jar, topped with gray salt and chives, served with slices of baguette.

The Fairfax: sandwich made with soft scrambled eggs and chives, cheddar cheese, caramelized onions, and sriracha mayo in a warm brioche bun.

Filipino-American chef Alvin Cailan founded Eggslut as a Los Angeles food truck in 2011, having spent time in Michelin-starred restaurants in the Pacific Northwest. He opened Eggslut’s first, and flagship location in 2013, inside the Grand Central Market in Los Angeles. The opening — and its popularity — was driven by Cailan’s disillusionment with L.A.’s breakfast options: “It was crazy because I really wanted to eat good breakfasts. Portland’s such a big breakfast place. You go to LA and there’s nothing, because everyone is trying to beat traffic.”

Cailan’s breakfast creations soon won plaudits, with the success of the truck prompting the Grand Central Market opening, which still commands two hour lines at peak times. In 2014, Cailan said he saw Eggslut as a single location restaurant, but a cookbook deal and a series of New York pop-ups were the context for the brand’s steady creep across Los Angeles; despite Cailan declaring himself “over” Instagram food. Cailan’s Eggslut project dovetails with his commitment to telling the story of Filipino food in Los Angeles. The upcoming cookbook, Amboy, fits alongside a Unit 120 space in Los Angeles’ Chinatown, which acted as an incubator for aspiring Filipino chefs and restaurateurs. That space is now Lasa, a celebrated Filipino restaurant from Chad and Chase Valencia that started life as a residency in that incubator.
