Tim Spedding and Louise Rødkjær will come back to London for the weekend with a residency at Hackney Wick’s Giant Steps.
The former Coombeshead Farm head chef and restaurant manager return to London after departing in 2017; the pair had initially planned to open a restaurant of their own, but settled at Coombeshead after a few months in Cornwall. They are now pursuing their own venture in the south west. Spedding’s cooking at Coombeshead has been widely acclaimed, as was his work at The Clove Club and P. Franco. This weekend residency will use ingredients from the land around Coombeshead, including Cornish mackerel, other day boat fish, and Dexter onglet. It will also have the peripatetic bent of Spedding’s cooking at P. Franco: that onglet will be paired with fried peppers, perhaps guindillas; sourdough flatbreads will be served with stracciatella and Le Coste olive oil.
Rødkjær and Spedding are the latest in a series of residencies at Giant Steps: Freddie Janssen and Seb Myers’ Snack Bar, Missy Flynn and Gabriel Pryce Rita’s Dining, Honey Spencer and Anaïs Van Manen’s Bastarda have all taken over the barbecue for a weekend at a time, with chefs from Brilliant Corners covering the food otherwise.
Rødkjær and Spedding will be in residence on 1 and 2 September.
