Successful burger chain continues charity collaboration with Asma Khan
Haché will partner with future Chef’s Table star and Darjeeling Express chef-owner Asma Khan on the Lotus burger as part of its series of collaborations with female chefs, including Chantelle Nicholson of Tredwells and Zoe Adjonyoh of Zoe’s Ghana Kitchen. Khan’s burger — a Bengali Chop vegetable patty and grilled seasoned aubergine with a turmeric and chilli mayonnaise — is inspired by The Lotus Flower, a charity that supports vulnerable women and girls impacted by conflict and displacement. £1 from every burger sold will go to the charity, available from 4 January, as will £0.50p from Khan’s turmeric and chilli-spiced fries.
Acclaimed hotel’s executive chef departs after restaurant announcement
Shay Cooper will step down from The Dining Room at The Goring. Nathan Outlaw’s new, “relaxed” seafood restaurant at the hotel will open later this year, and Cooper’s departure will open up a new opportunity, not to be filled by Outlaw. With Claridge’s’ new flagship widely tipped to be Eleven Madison Park’s next project, and Tom Kerridge, Albert Adrià, and Peter Sanchez-Iglesias all signing or signed to big-ticket hotel openings in recent months, will this be a running theme into 2019?
