After Closing in Mayfair, Wild Honey Will Open in St James’s

Anthony Demetre will reopen Wild Honey on Pall Mall in late May

Chef and restaurateur Anthony Demetre has announced that he will reopen his acclaimed Mayfair restaurant Wild Honey on the former site of the Balcon restaurant, on Pall Mall in St James’s. The restaurant will be inside the Sofitel St James’s hotel.

Demetre — with his head chef Simon Woodrow — has said he will evolve the food and style of the restaurant, maintaining its French core and “contemporary” tag.

Dishes at launch might include warm smoked eel and rillettes; bouillabaisse; slow-cooked and crisp tripe with sweet spice, fried egg and raw cream; roast saddle of rabbit with slow-cooked shoulder cottage pie; Tarte Tropezienne; classic English custard tart; and London wild honey ice cream.

The restaurant will open in late May; Wild Honey’s original site, in Mayfair, went up for sale early 2019, before confirming closure in February.
